Vegetable pudding for diabetic people
For this recipe (ideal not only for people with diabetes but also for those who want to lose weight ) you will only need the following ingredients:
- 2 sachets of tasteless gelatin
- half a cup of chopped celery
- half a cup of chopped carrot
- 1/2 cup of mushrooms cut into strips
- half a cup of chopped cherry tomatoes
- 6 tablespoons of apple cider vinegar
- 1 tablespoon of chopped parsley
- salt and pepper
The preparation is really simple:
Hydrate the gelatine with water and let it rest for 5 minutes. Add the vinegar and two cups of boiled water. Leave in the refrigerator for 20 minutes. Then, add the vegetables, salt, and pepper. Put everything in a flan mold and leave it in the refrigerator for at least 12 hours.
The only thing to do next is to carefully remove it when serving and eat it cold. It is an excellent recipe to prepare on hot days or as an appetizer.
Tuna and rice salad
A truly delicious dish and especially suitable for diabetics. It is easy to prepare and is the ideal solution for when you don’t know what to cook. The ingredients are:
- 1 can of natural tuna fillet
- half a cup of brown rice
- 1/2 cup chopped onions
- half a cup of chopped celery
- 1 clove of garlic
- 1 egg
- 150 grams of tomato sauce
- 2 egg whites
- 2 tablespoons of defatted broth
- half a teaspoon of red pepper
- a quarter cup of chopped parsley
- 1 teaspoon of thyme or oregano
- a quarter of a teaspoon of curry
- salt and pepper
To prepare this rice salad, you need to mix the tuna with the rice and then add the celery, garlic, salt, and pepper and set aside. In another container, beat an egg and the two egg whites; add the tomato puree, broth, parsley, and spices.

Add them to the previous mixture and mix to mix well. The next step is to place everything in a previously buttered pudding mold, cover it with aluminum foil, and put it in the oven for 50 minutes. Remove the aluminum foil and cook for another 10 minutes. Pour over the tomato sauce and serve hot.

Heat some vegetable oil in a pan and place them one by one until they are golden brown (you can put the lid on to cook them better).
Chunks of chickpeas
This legume is widely used in Arab cuisine and, moreover, it is endowed with numerous beneficial properties. If you have diabetes, you can include chickpeas in your meals. In this case, they are ideal morsels for when you get hungry before dinner or as a delicious and tasty appetizer. The necessary ingredients are:
- 500 grams of cooked chickpeas
- 3 spring onions
- 1 minced clove of garlic
- a spoonful of oats
- 1 egg
- 2 tablespoons of chopped parsley
- salt and pepper
Put half a cup of water in a saucepan and cook the spring onions and chopped garlic for about 8 minutes, with the lid on and at medium heat. Meanwhile, add the cooked chickpeas with the egg, oats, and parsley. Add the ready-made spring onions, salt, and pepper. You will need to obtain a homogeneous mixture.
Divide into 12 portions in the shape of balls. In a pan pour a little vegetable oil and put the chickpea balls; cook them for about 4 minutes, until they are golden brown. Two morsels will provide 28 grams of carbon hydrates and 33 mg of cholesterol.
Tiramisu suitable for diabetic people
It is one of the most delicious desserts in the world. However, many diabetics deprive themselves of the opportunity to eat it, thinking that it is forbidden to them. Nothing further from reality! Try this tiramisu recipe for diabetics. The ingredients are:
For the sponge cake:
- 2 eggs
- 8 egg whites
- 1 tablespoon of water
- 5 tablespoons of powdered sweetener
- 1 teaspoon of vanilla essence
- 2 tablespoons of cornstarch
- 100 grams of self-raising flour
For the cream:
- 200 grams of skimmed white cheese
- 1 tablespoon of skimmed vanilla yogurt
- 1 teaspoon of tasteless gelatin
- 2 tablespoons of lemon juice
- 1 tablespoon of Oporto
- 3 egg whites
- 4 tablespoons of powdered sweetener
For the filling:
- 150 cm3 of coffee
- bitter cocoa suitable for diabetics
- coffee beans
Although there are many ingredients, the preparation is not complicated. For the sponge cake, you need to whisk the egg whites and add the eggs, water, and sweetener. Then add the vanilla essence, flour, and starch.
Mix everything very well. Pour into a greased pan. Bake in a preheated oven over moderate heat for 10 minutes. Allow to cool and remove from the pan.
For the cream, mix in a bowl the white cheese, the tasteless gelatin (hydrated with lemon juice and cooked in the microwave for 30 seconds), and the yogurt.
Finally, to stuff it, cut circles of sponge cake; one by one, moisten them in the coffee and pour the cream, cover with another circle, and so on. When you finish the layers, sprinkle with bitter cocoa and decorate with coffee beans. Serve very cold.
